Making Crockpot Shredded BBQ Chicken

Nothin' but meat....
The kiddo could eat her steak while it's still "moo'ing" on the plate while bratwurst is a staple in this German-American household! Funny thing...I was a vegetarian for several years in my early 20's mainly due to digestive issues that couldn't be identified. Come to find out it's not meat that's the problem but dairy and gluten in my diet. So...let me at that meat I tell 'ya!
Chicken is one of our main go-to-meats because it's lower in fat than beef and pork, and can be used in so many dishes. Whether you choose to cook the whole breast, shred it or use it as ground chicken, the versatility seems endless. I choose to shred the chicken a lot because as a busy working Mom of an athlete I honestly don't have the time to prepare dinner most nights. But with a Crock-Pot shredding chicken is "easy peasy!"
BBQ Chicken became a favorite for us after we starting doing take-out meats by the pound from restaurants. We often found the meat to be costly and too sweet (the hubby is a Type 2 Diabetic and has to carefully watch his sugar intake). I figured why not try my own recipe and it turned out pretty awesome. Here is what you need:
Ingredients
- 2 lbs. Chicken Breast
- 1/2 Cup Water
- 1/4 Cup Apple Cider Vinegar
- 1/2 Cup of Your Favorite BBQ Sauce
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1/2 Teaspoon Paprika
- Salt & Pepper
Cooking Instructions
- Cut the chicken breasts into manageable size portions to fit into the Crock-Pot
- Salt & pepper the chicken on both sides (before adding the marinade mix)
- Add the water, apple cider vinegar, BBQ sauce, garlic powder, onion powder and paprika into a bowl - mix well to create a marinade
- Pour the marinade over the chicken (make sure the chicken is coated well)
- Set it & forget it 😋
Cook the chicken on high for 4-6 hours or low 8-10 hours. Remove the chicken, shred it in a dish (I always add some of the liquid from the crockpot for extra flavor). Top your chicken with some extra BBQ sauce or eat it plan...either way it's super delish' and can be added to many dishes!
